Cookie Therapy 101

You heard the expression, “Hand in the cookie jar.” Well, one time when my brother had a friend over, this young man fell asleep eating my mom’s chocolate chip cookies. We found him asleep on the couch with his hand still in the bag of cookies where he had drifted off into a blissful sugary heaven.

My mom’s chocolate chip cookies were practically famous. She made thousands for our family, friends, and neighbors. She kept a special mixing bowl to accomodate 5 times the normal recipe. Baking cookies took most of the day, then she carefully packaged them into freezer bags for storage in the big freezer in the laundry. 

We all have a favorite food that reminds us of special times or special people. Enjoying this food can bring back good feelings of belonging and comfort. To this day, chocolate chip cookies are my favorite and always remind me of my mom. 

In this time of crisis, I want to share my chocolate chip cookie recipe with you. It’s not exactly like my mom’s recipe, as she used homemade butter from the farm. It’s very close though and I think they are the best cookies around! I hope this brings you a bit of comfort and happiness.

CHOCOLATE CHIP COOKIES

4 sticks butter, softened

2 cups white sugar

2 cups brown sugar

4 eggs

1 Tbs vanilla

6 cups all purpose flour

1 tsp salt

2 tsp baking soda

4 cups chocolate chips, semi sweet (or 2 bags)

Preheat the oven to 350 degrees. Cream butter and sugars in a large bowl. Add eggs and vanilla and cream until fluffy. Stir together flour, salt, and baking soda. Slowly add flour mixture into butter mixture. Continue mixing by hand as dough gets stiff. Stir in chocolate chips.

Form into 1-inch balls and place 12 on a cookie baking sheet. Bake for 10-12 minutes. Be careful to not over bake and allow to rest on the baking sheet. Once cooled, store in freezer bags in the freezer. Cookies keep well if frozen.
